我整餅天后這回真是一世英名一朝喪!
事源多月前二姊整chocolate pavlova時用剩了一大罐Hershey's cocoa powder, 其實今年五月都到期了, 但應該還可以食用的. 於是一直都想造個朱古力餅或什麼的. 早陣子姨母們都說叫我造些muffins她們吃(可想而知我的整餅技巧一直都備受"尊重"的), 我又一直都說: "搵個禮拜啦!"
適逢端午佳節, 她們都去我母家, 帶了她們大清早弄好的鰻魚壽司來(對, 母家過節未必吃糉, 可以吃壽司! :P), 我便大大聲說造些chocolate muffins給大家吃.
原來連cup size tin foils都沒有, 下午一時多才跑去搜尋. 其實造muffins十分簡單, 不需一小時便可放入焗爐.
Recipe是網上找來的Hershey's Choco-Lowfat Muffins, 奉勸大家, 勿試! Muffins我說只得六十分, 二姊更"中肯": "60?! 48啦!" My God...
放了在焗爐時, 聞起來是不錯的, 我和二姊都說, 熱騰騰時吃, 怎也不會差到哪裡去. 還說如果不太可口, 或許送些給鄰家的小朋友及婆婆吃(幾衰!)
怎知, 大家吃完都說麻麻... 二姊說: "如果掩著人家眼睛, 給人試吃, 對方也未必知道是muffins!" 笑死!
姨母們本想帶點回家, 看來, 飯桌上的muffins可能都會被丟進垃圾桶了! 給鄰居吃? 我怕以後碰到人家不好意思啦! :(

啤: 我諗唔關D粉事, 落得1/4cup咋嘛, 係本身hershey's cocoa powder整餅麻麻... aulina都講過架啦.
I took a quick look at the recipe.
For step 2, mixing and folding in the ingredients, do not overmix them or the batter won't rise when baking. I guess people tend to mix the batter too thoroughly. That has to do with the texture of the muffins. From the picture you might have overmixed the batter?
As to taste, I can't tell ....
I say try it again and post back.

x2 with laichungleung 望相係真係似 over mixed,乜焚應該coarse啲冇咁滑淨(正常十幾分鐘from weighing to oven應該夠有突,所以你話一個鐘,我都有感不妙喇……)
另,ingredients方面有少少問題,完全冇油,binding上面唔似會ok。仲有,你果隻好似唔係special dark呀呵?
下次,搵日,唔知幾時,等我整返pat(不過我成日覺得muffins mixing閉上眼冇問題,係香港啲爐硬係有唔妥……)

對啊!其實造朱古力的甜點,那些baking chocolate的質素有很大的分別啊!我用valrhona,它夠fine又夠濃:)

valrhona貴就貴左d,但勝在質素夠穩定!BTW,吾好去CITY SUPER買valrhona,好鬼貴啊!
yes! Lindt都好OK,如果要做一些casual dessert(I mean,我會用valrhona做難度較高的甜點,無謂失手,或者那些甜點是送給honey的,當然要用valrhona,否則我也是用Lindt),但Lindt的顏色較matt,如要做gloss效果的甜點,便要用valrhona了!
